From India to the atelier in New Jersey
Pepper is the spice that made the world go to sea. For most of history it was worth its weight in silver, and it came from one coast. Its oil is not the sneeze of the grinder but something drier, woodier and more elegant, a heat you feel rather than taste.
What black pepper is
Black pepper oil is steam distilled from the dried, unripe berries of Piper nigrum, a climbing vine of the tropics. The pungent piperine that burns the tongue does not pass into the oil; what remains is the aromatic fraction, built on caryophyllene, limonene and pinene, which smells dry, woody and warm with a fresh, faintly citrus top. It is one of the perfumer's most refined spices, capable of giving a composition heat and structure without any of the crudeness of the ground berry.
Where our black pepper comes from
Ours comes from India, the original home of pepper and still the source of the most aromatic oil. The vine grows on the warm, rain soaked slopes of the southwest, on the coast that gave pepper to the world, and the berries are harvested by hand as they begin to ripen. Indian pepper is prized for its high caryophyllene content and its balance of freshness and warmth. Pepper from other origins tends to be flatter and more purely hot. The Indian oil has a woody grace that I find nowhere else.
How black pepper smells
Spicy, woody, warm and herbaceous. There is a fresh, almost lemony brightness in the first seconds, then a dry, radiant heat with a woody backbone that lasts well into the heart of a composition.
